What I Ate: Zucchini, Corn And Tuna

I was originally going to have roasted zucchini, pepper, and mushrooms for supper but when I got home from work the fridge fairies had taken off with some of my key ingredients (ie. The Boy had already made his own supper using them up). It is tough enough on a fast day without having to figure out what you’re going to have for supper! Luckily I pulled through, improvised and had this on the table in under twenty minutes.

On a side note, I think I need to get a little more inventive with my recipe names… and work on making my meals look a little more appealing too.

What I Ate: Leftovers

Salsa salad mixed with cauliflower rice, warmed in the microwave. Because I am a creature of habit. It freezes well, just so ya know

Also, I reached a small milestone last week that I didn’t make a big deal about because I was worried it was a fluke. I think its now safe to say that I am under 140 pounds, or ten stone! I am very pleased for myself and feel sure that I can keep it off for life. I think my next goal will be 130 pounds. This one will take a little longer but I’m motivated to get there.

What I Ate: Loaded Sweet Potato

You may have noticed by now that I like simple food on my fast days. I don’t like to spend too much time preparing my supper, and I like to keep my ingredients to a minimum. Basically, I want to get the food in my belly as quickly as possible. You may have also noticed that I am a fan of the black bean, corn and salsa combo. I’m keeping the theme going with this sweet potato recipe that is my favourite fast day meal yet.

What I Ate: Cauliflower ‘Rice’

This one is so simple I hesitate to call it a recipe. It was a filling substitute for rice, as a side dish to the curry I had last night. It was not a fast day, but I was trying to be careful with my calories and I would definitely make it again on a day where I have to stay under 500.

It’s important to point out that this does not taste like rice, and has a slightly different texture. If you do not like cauliflower, you probably will not like this. Otherwise its a tasty dish that will make 2 big or 4 small servings.

What I Ate: Salsa Salad

I don’t really have a good name for what I made tonight, so salsa salad it is.  I didn’t have much available, and I wanted something fast. I threw together a few ingredients that turned out to be super tasty. I didn’t have to worry about a stove or oven heating up my already stifling apartment either. I don’t know what it’s like where you are, but Ottawa is in the middle of a heat wave!
